Only 18 more days until my two oldest daughters head back to school.  It’s hard to believe I will be driving a third grader and first grader to school this year.  A few days ago I took them to get all of their school supplies and while we were at it decided to make a trip through Giant Eagle to get some ideas for school lunches.  I really prefer to do my grocery shopping at Giant Eagle because they have a great selection of products that make packing lunches a breeze.

As we were wandering around the store I asked Alleigh and Kaelyn to point out things they would like to see in their lunch boxes this school year.  I’ve gotta say I wasn’t the least bit surprised when Kaelyn steered me towards the JIF Peanut Butter.  Alleigh then said we would need some Smucker’s Concord Grape Fruit Spread to go along with it.  And while we were in the same aisle I grabbed a loaf of Schwebels Bread.

We continued through the store while the girls pointed out Giant Eagle String Cheese, Goldfish Crackers, and Capri Sun.  There was a little bickering over what flavor Capri Sun would make it into our shopping cart, but lemonade won this trip.

I knew we had found a winner when Alleigh and Kaelyn both ran for the Entenmann’s display.  They were both after the Little Bites muffins, but had a discrepancy on flavors.  Alleigh was adamant she wanted blueberry while Kaelyn simply had to have chocolate chip.  I admit I caved.  I told them to toss both boxes in the shopping cart.  After all they are the perfect dessert to finish off a school lunch as well as a great breakfast treat for on the drive to school in the mornings.  Maybe they’ll even share a pack with me, hehe.

We headed to the check out where I made sure to present my Giant Eagle advantage card which scored me even more savings and continued to add to my fuel perks too.

Once we got home the girls were ready for lunch and so I decided to surprise them with a sneak peek at a packed school lunch.  They wanted a JIF Peanut Butter and Smucker’s Fruit Spread sandwich, but I wanted it to be a little more special than that…

Peanut Butter & Fruit Spread Butterfly

Ingredients:  bread, peanut butter, fruit spread, string cheese, candy eyes
1.)  Stack 2 pieces of bread and cut with a butterfly shaped cookie cutter.
2.)  Spread peanut butter and fruit spread between bread.
3.)  Cut a piece of string cheese in half and then cut antennas at the top.
4.)  Lay string cheese down the center of the butterfly for the body.
5.)  Dab a little peanut butter on the back of two candy eyes and place on the string cheese.

Alleigh gave it two thumbs up and definitely wants a repeat on the first day of school.

    My kiddos are too young this year for school, but I think they would still love the butterfly shape for a sandwich! #client

    What a cool back to school lunch. I will have to make this for the kids. They can help and they would love the fun sandwich with the mini muffins.
